The Portable Propane Grill review highlights how grilling chicken can become an effortless and delicious affair, particularly with a well-executed Lemon Chicken recipe that guarantees juicy, tender results. Mastering the art of marination and employing straightforward techniques ensures your outdoor meals are never dry or unevenly cooked.
This Lemon Chicken recipe is particularly great because it uses basic pantry staples and doesn’t require a long list of fancy ingredients, making it easier to whip up whether you’re camping or at a tailgate party.
Cooking Chicken on a Portable Grill
Grilling has always been my preferred way to prepare chicken, and the chance to do this using a portable propane grill makes it even better. These grills are designed for convenience, making them a go-to option for both spontaneous cookouts and travel cooking. However, many people stumble when it comes to achieving that perfect grilled flavor without the risk of dryness or uneven cooking.
For this recipe, I simplified the process to make it accessible to anyone, regardless of skill level. By using a two-zone cooking technique, you can get the chicken perfectly grilled with impressive grill marks while ensuring it remains juicy inside. I’ve had great success with this method and believe it’s the most effective approach for portable grill cooking.
Lemon Chicken Recipe
This Lemon Chicken is perfectly seasoned with a bright citrus flavor, perfectly cooked with grill marks and juicy tenderness.
Prep time 10 minutes | Cook time 25 minutes | Total 35 minutes | Serves 4
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 tablespoons lemon juice (freshly squeezed)
- 2 tablespoons lemon zest
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- In a mixing bowl, combine 1/4 cup olive oil, 3 tablespoons lemon juice, 2 tablespoons lemon zest, 4 cloves minced garlic, 1 teaspoon dried oregano, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon red pepper flakes (if using).
- Add 4 boneless, skinless chicken breasts to the marinade, ensuring they’re fully coated. Cover and refrigerate for at least 30 minutes, but ideally up to 2 hours.
- Preheat your portable propane grill on high for about 10 minutes, then reduce to medium heat for cooking.
- Remove chicken from the marinade, letting excess drip off. Securely place the chicken on the hot section of the grill and close the lid. Cook for 6-7 minutes without moving.
- After 6-7 minutes, use tongs to flip the chicken and move it to the cooler side of the grill. Close the lid and cook for another 10-12 minutes, or until the internal temperature reaches 165°F (75°C).
- Once cooked, let the chicken rest for 5 minutes before slicing. This helps retain juices.
Recipe Notes
Leftover grilled chicken can be stored in an airtight container in the refrigerator for up to 3 days. This dish can be made ahead by marinating the chicken a day in advance. If you’re running low on lemon juice, white wine vinegar can work as a substitute to give a similar tang.
