Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef (or turkey for a leaner option)
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can diced tomatoes, with juice
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup beef broth (or water)

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium-high heat on the Coleman stove.
  2. Add 1 medium diced onion and sauté until translucent, about 5 minutes.
  3. Stir in 2 cloves of minced garlic and cook for an additional minute until fragrant.
  4. Brown 1 pound of ground beef in the pot, breaking it up as it cooks, until no longer pink, about 7 minutes.
  5. Add 1 (15-ounce) can of kidney beans, 1 (15-ounce) can of black beans, and 1 (15-ounce) can of diced tomatoes with juice to the mixture.
  6. Sprinkle in 2 tablespoons of chili powder, 1 teaspoon of cumin, and season with salt and pepper to taste.
  7. Pour in 1 cup of beef broth, stirring everything to combine.
  8. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 15 minutes, stirring occasionally, until the chili thickens.

This chili can last up to 3 days in the refrigerator in an airtight container. If you’re aiming for a bigger batch, it freezes well for up to two months. For a vegetarian option, substitute the ground beef with lentils or extra beans.
