Cooking on the Weber Smokey Joe is a streamlined process. Firing it up is straightforward, and you don’t have to deal with complicated setups. With just a few basic ingredients and some careful attention, you can create a delicious grilled chicken that impresses everyone at your next outdoor gathering.

Why the Weber Smokey Joe is the Secret to Great Grilled Chicken

For those seeking convenience and solid grilling performance, the Weber Smokey Joe is a top choice. It suits casual grillers who enjoy tailgating or camping, while also catering to enthusiasts who appreciate the unmatched flavor only charcoal can provide. The alternative would be a larger gas grill, which may be better for extensive gatherings but lacks the compact portability of the Smokey Joe.

  2. While waiting, mix the olive oil, garlic powder, smoked paprika, salt, pepper, and lemon juice in a bowl.
  3. Coat the 4 chicken thighs with the mixture, ensuring they are evenly seasoned.
  4. Once the grill is ready, place the chicken thighs skin-side down on the grates.
  5. Grill the chicken for about 10 to 12 minutes, then flip and grill the other side for another 10 to 12 minutes or until the internal temperature reaches 165°F.
  6. Remove the chicken from the grill and let it rest for 5 minutes before serving.

Recipe Notes

This chicken pairs wonderfully with grilled vegetables or a fresh salad. Store any leftovers in an airtight container in the fridge for up to 3 days. You can also substitute chicken thighs with boneless breasts or drumsticks, and if you prefer, use your favorite dry rub in place of my spice blend.
